Cellulose structure/Calvero,Creative Commons January 6th is Anselme Payen's birthday. Payen was a French chemist who, among other things, was the first to identify and isolate cellulose. Cellulose is a carbohydrate, particularly a polysaccharide in the form chain of connected glucose molecules. It is the primary component of cell walls of green plants and algae. It serves as the food energy source of ruminants and some insects. It was also used to produce the first thermoplastics in the form of nitrocellulose.
