This is time-lapse crystallization of sodium acetate or hot ice, a chemical you can make from baking soda and vinegar and can cause to crystallize on command.

You bring chemistry alive. One hears of crystals growing but we tend to think of minerals and lifeless. You’ve shown them in a way which makes them seem animated, and makes me rethink geography as a whole.
