Liquid nitrogen ice cream isn't 'nitrogen-flavored' (nitrogen is tasteless and odorless anyway), nor is there actually any liquid nitrogen in the ice cream. This is ice cream made instantly, rather than over the course of several hours, by pouring liquid nitrogen into the ingredients. The nitrogen boils away into the air, which is mostly nitrogen, while the frozen treat remains. This is a great project for a cryogenics or phase change demonstration.
